Once again , back with an interesting recipe!!
It was all about yesterday's morning when I was planning for my breakfast, that what to have as my morning meal and I thought of this recipe. It was such a nice meal you can even try it as your Sunday brunch.
The recipe is a fusion of Indian and Italian cuisine. Your regular pasta tossed in makhni gravy or sauce, you can say. Believe me this new taste of pasta will definitely make your taste buds jump off. So let's move towards the recipe so that you can also try it.
Ingredients
Pasta (200gm)
Onion 1
Garlic 5
Tomato 1
Cashew nuts 6-7
Dry red chilli 1- 2
Butter 25 gm
Black pepper 2-4
Capsicum 1
Corn 1
Refined flour (maida) 1tbsp
Milk 2 tbsp
Cheese
Salt (as per taste )
Vegetable oil (refined oil) as required
For Pasta
In a pot, add water with little salt and 1 tbsp oil , then add pasta to the pot and let it boil until pasta softens and is in edible form.
When it is cooked then drain all the water let the pasta get cool or better you can toss the pasta under running tap water to drain excess salt and oil. Then keep it aside.
For Sauce
In a new pan add butter and as the butter melts add your Indian spices which are- dry red chilli, coriander seeds, black pepper and roast them until the species release their aroma.
After this add finely chopped onion to the pan and cook for a while until the onion looks translucent, then add chopped garlic.
When garlic and onion are done add finely chopped tomato into the pan and after adding tomato instantly add cashew nuts and salt also.
Let all this mixture get cooked on low flame for 4- 5 minutes and meanwhile if you find that your spices are too dry and burning on the flame just drizzle some water on it to deglaze the pan but make it sure that not to add much water or your sauce will be watery.
When it is completely cooked then let it cool for a while , then pour it into the mixer jar and then make a fine paste of it.
Preparing the Main Dish
Chop the capsicum into square shapes then add butter to the pan add corn and chopped capsicum , saute them , till the time in a bowl add flour and milk and make a thin mixture.
As the veggies are done add the sauce that we made and after that add the milk and flour mixture to the pan. Mix all the things properly and make sure your veggies are coated with the sauce .
Now add the boiled pasta and again give it a mix or you can also toss the dish on pan as this will avoid crumbling of the pasta and veggies.
Grate some cheese over it as per your taste if you want it more creamy then you can also add some fresh cream on top of it but this is completely exceptional.
Finally adjust the seasoning by adding salt and make this in mind that the sauce which we made also contains salt, so better taste it and then add.
Also add crushed black pepper, red chilli flakes and dry oregano on it and for the last time give it a mix and then turn the flame off.
Your Makhni Pasta is ready to serve.
